Cinnamon Cornbread Blondies

Soft, moist, and fluffy cinnamon cornbread blondies made with Greek yogurt.

Ingredients

Base

  • 1 cup of all purpose gluten-free flour
  • 1 cup of cornmeal
  • 1 tsp of baking powder
  • 1 tsp of cinnamon powder
  • 1/2 cup of granulated monk fruit
  • 2 tsp of vanilla extract
  • 1/3 cup of ghee (room temperature)
  • 1/2 cup of Wallaby Plain Organic Greek Yogurt
  • 2 organic whole eggs
  • 3/4 cup of 2% organic milk
  • 1/2 cup of drained corn

Sugar-Free Icing

  • 1 cup of powdered monk fruit
  • 3 tbsp of 2% organic milk

Preparation

Step 1

Preheat the oven at 350F.

Step 2

Mix the dry ingredients for the blondies.

Step 3

Add the wet ingredients (except for the corn) and mix until fully incorporated.

Step 4

Transfer the batter into an 8×8 baking dish.

Step 5

Top with most of the corn, leave the rest for the end

Step 6

Bake for 35-38 minutes.

Step 7

Mix the ingredients for the glaze.

Step 8

Once the blondies are baked and cooled, top them with glaze and leftover corn.

Step 9

Slice into 9 pieces and enjoy!
