Chicken Salad

A creamy chicken salad with sweet grapes and cranberries, crunchy almonds, and fresh herbs served on crispy crostini.

Ingredients

  • 4 cups shredded rotisserie chicken
  • 1 cup Wallaby Organic® Plain Greek Low-Fat (or Whole Milk) Yogurt
  • 1 cup halved red seedless grapes
  • 1/4 cup dried cranberries
  • 1/4 cup sliced almonds plus extra to garnish
  • 1/2 cup halved cherry tomatoes
  • 1/3 cup chopped green onions
  • 2 tbsp chopped parsley
  • 1 tsp black pepper
  • 1/2 tsp salt
  • 1 pack crostini or 1 French baguette cut in 1-inch slices

Preparation

Step 1

In a big bowl, mix yogurt, parsley, salt and pepper.

Step 2

Add shredded chicken, grapes, cranberries, almonds and green onions. Stir well until combined.

Step 3

Spoon chicken salad over crostini or French baguette slices. Add a halved cherry tomato to each and garnish with more sliced almonds.
