Caramelized Banana Pancakes

Fluffy pancakes topped with sweet, caramelized banana goodness.

Ingredients

Dry

  • 1 1/2 cups all-purpose flour
  • 3/4 tsp baking soda
  • 1 tsp salt
  • 1 tbsp sugar

Wet

  • 1 cup Wallaby Organic® Greek Nonfat Plain yogurt
  • 1 egg
  • 1/2 cup whole milk (divided in half)
  • 3 tbsp melted butter

Caramel Banana topping

  • 1 cup sliced bananas
  • 1 tbsp prepared caramel topping sauce
  • 1/2 cup Wallaby Organic® Greek Nonfat Plain yogurt

Preparation

Step 1

Whisk together dry ingredients in one bowl, then wet ingredients (less 1/4 cup milk) in a separate bowl.

Step 2

Mix wet and dry ingredients together, just enough to combine. Add additional milk if necessary to achieve your desired consistency.

Step 3

Cook right away on hot, greased pan or griddle.

Step 4

In separate pan, lightly greased, lay sliced bananas down and turn occasionally until color deepens and some brown edges are visible.

Step 5

Add caramel sauce and turn banana slices until coated.

Step 6

Stack cooked pancakes and top with a large dollop of yogurt, then spoon caramel banana mixture on top. Enjoy!
